My Mom sent me this recipe:

Crockpot Potato Soup

30 oz. frozen shredded hash browns
3 14-oz. cans chicken broth
1 can cream of chicken soup
1/2 cup onion, chopped
1/4 tsp. ground pepper
1 8-oz cream cheese

bacon, shredded cheddar cheese, green onion, and/or sour cream for garnish

Combine ingredients (except cream cheese) in crockpot. Cook 6-8 hours. About one hour before serving, add cream cheesa and cook till melted.

Ladle in bowl and top with garnish.

So...can you help me out with a substitution for the chicken soup? I can use my dehydrated hashbrown potatoes, and make a soft cheese with our goat's milk, and use organic chicken broth, but what would you use in place of the processed, canned soup?

Here is what I use:

Cream Soup Mix
Combine -
2 c. instant powdered milk
3/4 c. cornstarch
1/4 c. chicken bouillon
1 tsp. onion powder
1/2 tsp. thyme
1/2 tsp. basil
1/4 tsp. pepper

To make 1 can condensed soup:
1/3 c. mix and 1 1/4 c. water
Boil 2-3 minutes stirring occasionally.

I just store it in a jar in my pantry and it only takes a couple of minutes to get it ready. I have also added other seasonings on occasion so it can be changed according to your taste.
