I purchased 50 lbs of potatoes for $8.00 so now I need to preserve part of them or I will lose my bargin. I have a dehydrator and will dehydrate some of the potatoes...any good recipes that calls for dehydrated potatoes?

What about canning some? I did my "baby" potatoes last year, and turned out great. All you have to do is open the can and warm them up. I hope to do more this fall.

You can use them in soups and stews as well as scalloped potatoes and augratin potatoes. I have alos used them in a breakfast casserole in my crockpot. But I beleae you could rehydrate them and use about any way.
