What recipes do you use them in? how else do you process them up for saving?

Posted - Jul 22 2012 : 07:34:57 AM Apricots make tasty additions or fillings for oatmeal cookies, muffins, scones, turnovers, danish pastries and tortes. My grandma used to make an apricot upside down cake...I think it may have had rum in it too, but we've never found a recipe. Apricots can also be used for chutneys or glazes for pork and turkey. There are lots of great recipe ideas online.
Antoinette, I know what you mean....both of my apricot trees broke off near the base in the January ice storm so we are back to square one. I'll have to go visit my favorite orchard in Yakima (Eastern WA) to buy some for a few years until the new trees start producing.

Posted - Jul 21 2012 : 05:09:55 AM Canned or fresh apricots for apricot pie! Ans dried ones for apricot fried pies. I use the jam with a cream cheese mixture for the centers of kolaches. They are incredible!

I really like to mix in a about 2 table spoons of ball freezer jam pectin and about a cup of sugar with about 2 quarts of halved apricots, stir well and let sit a while until the sugar is not grainy and put in quart freezer bags and freeze for pies or just fruit for dessert later on. The apricots keep their pretty color and fresh flavor. I love apricots, I never have enough on my trees to do this but I would like to can apricot nectar to drink for breakfast in the winter.

Posted - Jul 19 2012 : 4:58:46 PM When I use them fresh, I usually make an apricot crisp - some thyme in the crumble topping really compliments the apricot's flavor. An apricot tart is good too - for the last one I made I mixed herbs de provence with some chevre, spread that on a par-baked tart shell, put sliced apricots on top, and brushed a generous amount of honey over it.

Posted - Jul 19 2012 : 4:26:24 PM You can grill & serve with ice cream or in a salad. I make gelato out of them. My mom always canned them, then whenever we wanted a treat she'd say "there are peaches, plums or apricots in the pantry" and we'd go pick a jar. I freeze the filling for apricot pies in ziploc bags and then just defrost and put in pie crust and bake. |
