I want to can some potato soup. I have canned potatoes and wonder if I can add some chopped onion and celery to the potatoes and process as usual. I would make it fairly concentrated so I can add milk when I used it. What do you think?

I wonder about processing the potatoes again since they are already canned.
Just thought it make them mushy since processing is also cooking them.

Yes, you can make it like you would to use, as long as you leave out the diary like you plan to.

Mary Beth, Yes, I am pressure canning. I know several ladies that are afraid of the pressure cooker. Never enters my mind. I have been canning for 60 years. That's 4 years less than I have been sewing. Good Grief!! I must be getting old.
