I want to can some potato soup. I have canned potatoes and wonder if I can add some chopped onion and celery to the potatoes and process as usual. I would make it fairly concentrated so I can add milk when I used it. What do you think?
Mary Beth, Yes, I am pressure canning. I know several ladies that are afraid of the pressure cooker. Never enters my mind. I have been canning for 60 years. That's 4 years less than I have been sewing. Good Grief!! I must be getting old.
Yes, you can make it like you would to use, as long as you leave out the diary like you plan to.

I wonder about processing the potatoes again since they are already canned. Just thought it make them mushy since processing is also cooking them.
