On our recent road trip, the boys and I had got to experience and Amish buggy ride out to a farm and had dinner with the family. One of the highlights of that meal (and there were many) was the peanut butter on the fresh bread. Oh my...

Here's one recipe I've found that seems close to what we had:
2 c. brown sugar
1 c. water
1 tsp. maple extract
2 c. peanut butter
1 (16 oz) jar marshmallow creme

In saucepan, combine brown sugar, water, and maple extract and bring to a boil. Blend peanut butter and marshmallow creme in separate bowl. Then, blend both mixtures together until smooth.

What I learned from this is that you just mix together the PB and creme as much as you can. They didn’t really get too smooth for me and then add them to the brown sugar mixture on the stove. I turned the heat down to low and kept stirring until everything sort of melted together and became smooth. I also couldn’t find a 16 oz jar of marshmallow creme so I bought a big jar and a small jar. This still makes a lot, but not nearly as much as 5 lbs of PB would!

One good thing about music, when it hits you, you feel no pain.

I just made the Amish peanut butter this morning. It wasn't as thick as I thought it would be. I had some on a slice of Amish cinnamon bread I made a few days ago,
just so I could try it right away. It' really good! I'm going to give my niece and nephew some in a jar, it makes quite a bit. Thanks for the recipe Wendy.

We visit an Amish area every year, and they serve the same peanut butter sauce at all of the restaurants too. Yum!

ruthie I like the syrup better then the extract. I have never made this recipe though, but I would bet to wager you could. You may need to use a bit more syrup though as it will not be as strong as extract. Also I would get a very very concentrated grade (they are graded like eggs, or meat, etc) maple syrup. Maybe increase it to 1 tablespoon instead of teaspoon.

The Amish are also known for eating this "spread" with cheese spread on toasted homemade bread. Never tried it, but it sounds decadent!

How wonderful for you and your family Wendy. I would love to experience time with an Amish family and an Amish buggy ride. I will bet you had the time of your life.
