Everybody has those staple recipes they use when they are in a bind for dinner or need a dish for a potluck, school function, etc. For dinner, mine is usually tuna casserole, for potluck it's Hawaiian Dream Pie. Super good and super easy. What's your go-to dish?

Grilled chicken breasts/pork chops, rice and broccoli. Ask me how much of this combo we ate when we first found out that Hubby needed to eat gluten free...

A simple soup is a great change from the casseroles. Our congregation eats communally every fifth Sunday and, this time, we took our Sausage Soup (made with kielbasa) with rice. The full recipe is on my cooking blog--Savory Bouffe--at my website listed below. We vary the seasonings according to how "spicy" we're feeling that meal. Yum!

For home it is sloppy joes - I hated these growing up but found a recipe that calls for using garlic powder, chili powder and mustard along with a couple other things and it is awesome.
We don't end up going to a lot of potlucks but if we do and it is summer time it is definitely my grandma's zucchini chocolate cake recipe. Everyone loves it - my son ate 6 pieces at a potluck once (had to explain that the idea of a potluck was sharing:))
Marly - I tried to do a gumbo recently and it didn't thicken. My roux looked perfect - very dark brown, and tasted great - I'm thinking I added too much broth - any thoughts?

I also like Dump Cake for a potluck or a really nice, chunky, chock-full-of-goodies green/veggie salad.
At home, it would also be a really good salad or my hubby does wonders with most anything in his wok . . . and I don't mean just Oriental style cooking. It can be fajita style, Carribean, Italian . . . you name it. He's a master at it.

MaryJane's spaghetti pie. Her recipe makes two pies, and with a salad and a loaf of bread, it is a yummy meal to take to someone who needs a meal, or to a potluck.

Jenny-Your Mexican dinner sounded so good,easy and something maybe I'll suggest to my daughter when her step-daughters come for the weekend. I took real hamburg,sauted it with onion,garlic and added a can of rinsed black beans. Added salsa to it, put in taco shells with lettuce ,tomatoes and taco sauce on top. Good! |

My "go-to" quick meal for the family is Meaty Mexican rice....I open a jar of any sort of meat I have home canned (burger or chicken usually) and then make 2 cups of rice (to make 4 cups cooked rice) and add a 1/2 pint jar of salsa and 2 handsful of grated cheddar cheese. Very simple and my kids love it. I serve it with simple steamed fresh veggies, and warmed flour tortillas. Very quick (as long as it takes to cook the rice) and easy.

For a group, it has to be Rachel Ray's Chicken Shortcut-a-Tore. It's easy, quick, and the recipe makes enough to feed an army.
For just me, penne with butter and cheese is fine.

My to-go dish is any kind of gumbo. When I cook a gumbo, I always cook enough to freeze part of it. It's really easy making a gumbo.

For the Mister, either shrimp with pasta in spicy mustard sauce OR salmon with basil, thyme, bay, and brown sugar.
For everybody else, baked chicken with Herbes de Provence.
For me, "butter stew" (roast beef and gravy over buttered noodles).
