DH and I are thinking about attending the monthly potluck dinner up at the volunteer fire department in our new community as a way to meet our neighbors and say hello...

We don't have a house yet on our new land, and don't want to bring something store bought, but we need a dish that will not only travel (an hour away) but travel well in this hot TX heat...

FYI - my oven is not working or I'd make my special Chocolate Cherry Cream Cake (Black Forest) or my Stained Glass Window Pie...

Any suggestions?

You could make a chopped vegetable salad! No cooking, easy-peasy, good for you and really, really tasty. Plus, you can use whatever you want in it. I made one for church a month ago and it was gone in no time. It had chopped summer squash, bell pepper, red pepper, yellow pepper, carrots, fennel, jalapeņo pepper (not a lot), cucumber, broccoli, cauliflower, tomato, green onions. (I chopped them fairly small) Then, a dressing made with olive oil, balsamic vinegar and garlic, salt and pepper - Voila!! Yum, yum!
Of course, the idea came from the MJ Idea Book.
