How do you bake your Tilapia? I'm looking for more ideas. We have used lemon/butter and also baked with crunched up corn flakes and cajun spice.

I will drizzle with olive oil and lime juice and then sprinkle with homemade Taco Seasoning and bake it for Fish Tacos.

I never bake it, I pan sear it or grill it and serve it with an herb sauce, a fruit jalapeno salsa, or blacken it if I'm feeling lazy :) Also, making up an herb butter or jalapeno/lime butter and putting over the pan seared fish is awesome, fresh and easy.

Grilled tilapia is also great for fish tacos!

Thank you all! I made it last night with my corn flakes and cajun coating and one asked me this morning, if we had any leftover! HA HA HA! They sometimes eat dinner for breakfast here.

My hubby cooks it in a wok . . he cooks EVERYTHING in a wok . . but uses different marinades and herbs/spices. One of our favorites is Carribbean style with a bit of poblano pepper for spice. He also does a mix of chopped veggies to go with it.
His wok is for every style of meal possible . . . not just Chinese. He is an excellent cook and I'm happy when he cooks. Nowadays he does most of it!

Tilapia that's a hit at my house:
Prepare bread crumb mixture:
1 to 1.5c panko (depending on number of fillets), 2 zested lemons, salt & pepper, 4 sprigs thyme - leaves pulled from stems (or lemon thyme is even better!), 2T olive oil - mix until incorporated
Oven @ 375, olive oil on a pan, place fillets, squeeze juice from 2 lemons over the tilapia. Bake for 5-7 min until just opaque. Pull out of the oven, splash with white wine, pile on the bread crumb mixture and return to the oven for 3-4 minutes or until bread crumbs start to brown. Serve with quinoa and some kind of veggie.

I make an Italian version with diced tomatoes and some breadcrumbs on top served with some noodles tossed with garlic and olive oil.

I dont have the recipe but we had Tilapia at my company's Christmas party and it was called Tilapia Oregenata- it was delicious- some diced tomoatoes and oregano- YUM!
