Posted - Oct 01 2011 : 12:35:33 PM Gosh. I thought of something else. This is for baked fish. Use a substantial fish filet, like haddock. Cut cucumber, skin and all, into thin "fish-scales"by slicing the whole cucumber lengthwise into halves, then slicing the thin half-circles from those. Spread dijon mustard or whatever you like on the fish and arrange the cucumber "scales" on the filet to look like fish scales. Bake. Serves up very pretty. This is an easy version of a recipe in the first Inn At Little Washington cookbook, where Patrick O'Connell gets like a million dollars for one serving of this. He serves it with a fancy version of what is basically cole slaw and some other stuff, I forget what. Improvise! :) |

They're so cooling and refreshing. I think you can also rub shredded cucumber on your face as a mild exfoliant, also refreshing.
Also, if you have a madelaine or something similar, slice a cucumber thinly, lengthwise, pat one side dry with a paper towel and spread it with some kind of interesting soft cheese, mixed with herbs or a spice -- whatever's around going spare. Roll up and skewer with a toothpick. Keep cold. Nice nibbles on a hot day, or for a buffet. |

She slices up a whole cucumber, puts in a pretty clear pitcher, adds water & ice
and we drink this yummy flavored water out of pretty wine glasses. The taste is divine!

Posted - Sep 20 2011 : 12:02:35 PM Thinly slice cucumbers, spread desired amount of cream cheese on fresh bread, remove crust if desired, cut into quarters. Makes a delicious brunch, or baby shower etc.sandwich.

Posted - Sep 19 2011 : 11:42:09 AM My husband and I enjoy fresh cucumber salads. Here's 2 simple ones:
Cucs & sour cream - peel & slice two cucs (1 per person) toss with 1-2 tablespoons of sour cream, 3 dashes paprika, 2 shakes of salt (to taste) - eat right away (the cucs will let off water if they sit in the salt and sour cream will become runny) Makes 2 servings
Cucs with tomatoes & red onion - peel and chunk (bit size) 1 cuc, chop 1 tomato, add thinnly sliced red onion to taste - drizzle with a bit of olive oil, salt & pepper - let sit 2-4 hours before serving - the salt "sweats" the tomatoes and cucs giving off a nice juice, stir & enjoy Makes 1 serving

Posted - Sep 11 2011 : 6:47:25 PM I just made a few jars of pickled cucumbers today. This year was a bumper crop for me & I have been using them in salads, raitas & tsatsiki. I am tired of them, no matter how fresh & yummy they are. They'll be a nice treat in the winter when I have a taste for them again.

Seriously, if you have tomatoes, green peppers and a few other things, cucumbers are essential to a good gazpacho. And then, let's see...you could add shredded cucumber to plain yoghurt, add a little powdered cayenne pepper, and you have raita, a nice cooling condiment to serve with any spicy food.
Don't look down your nose at pickles, though. There are so many kinds you can make, and package prettily for gifts. Many nutrition experts say that a pickle with a meal gives you the bitter taste you need to trigger proper digestion. |
