I love apple butter! This makes some of the best apple butter I've ever had. I'm planning on putting up a bunch for the autumn and winter, and I thought I'd share the recipe. I don't recall where i found it, but it sure is good!


BAKED APPLE BUTTER

10 lbs. apples
1 1/2 qts. apple cider
1 tbsp. cloves
1 tbsp. cinnamon
1 tbsp. nutmeg
5 lbs. sugar

Wash and quarter apples. Simmer in large pot until soft. Run through food mill. Stir in spices and sugar. Pour the mixture into an enameled roasting pan. Cover. Place in a 350 degree oven. Stir occasionally, until mixture boils. Then turn down the oven to 250 degrees and bake 5 hours or overnight. Ladle the thick apple butter into hot sterilized jars and seal.

Margo the reicpe for Pear Butter is:

6# of pears or apples
1 c water
2 1/2 c sugar
2 tsp ground cinnamon
1 tsp nutmeg
2 TBS lemon juice

Peel, core and slice apples. Place in large heavy saucepan and add water.

cook about 5 min over moderate heat or until pears are tender. At this point I use my hand blender and blend until very fine and smooth.

Heat oven to 350 add remaining ingredients, stir well and cook in heatproof baking dish. (I use an enamel roaster) for 3 to 4 hours or until the consistancy you like.

Laddle into jars and process for 10 min in water bath.

I use this recipe for apples and pears with equally good results.
I have found that after it sits for a little while on the shelf it gets better. It is easy and I have been making it for a long time. I pulled the magazine out that the recipe is in and it is dated Sept 1985. So that tells you how long I'v been using this reicpe.

Can't wait to try this I have two apple trees that I need to use up. I've been making applesauce but this will be a yummy change and I love the idea it is baked so I won't have to stand at the stove and stir it for a couple hours.

Hmmm, I was looking at the Ball canning site for other apple recipes and it says that apple butter only needs to be in the water bath 10 minutes, so take your pick

Thanks Annika, I haven't canned for years and just wanted to make sure of the water bath compared to the pressure canner. I love this stuff and I usually have to keep it away from the kids if I want any so this year I will share. ;)

Ruth, do you find that the crock pot adds moisture when it cooks? How long do you cook it.

Annika, Thanks so much for sharing your recipe. I can just smell it cooking in the oven - oh my goodnes - it just says "Fall". It also makes wonderful gifts too.
Going to try it this year! Last year I made Apple Butter in the Crock-Pot - also excellent.

I use an old heavy iron Universal hand crank mill, and it takes a bit of time. I have never tried a blender or processor, just my old mill, so I really can't say. The old food mill chops the apples and peels up pretty good, so I've never peeled them. As soon as the inflammation in my darned knee clears up, I'm going to go pick a bunch more! These apples are from "wild" apple trees and they have a heavenly old apple scent! The house smells delectable when it's apple butter time each year!

Oh Yes...Apple Butter. We picked apples yesterday and made 10 pints today. The smell in the house was incredible. Almost time for fall farmgirls!

I have a similar recipe that I got out of a Country Living magazine nearly 30 years ago, and it is so good and easy. I love the fact that I can put it in the oven and go about doing what ever I need to while it cooks down. I also use pears in this recipe, because free pears are easier for me to come by than apples. (I have access to a pear tree at mamas house. Her apple tree died a few years ago.) Even using pears the taste is very similar, some even have thought it was made with apples.

@ Judy ~ Of course I wash and sterilize the jars and make sure all of the lids are good sealing lids before hand, then I just can them in a hot water bath. Pints for 20 and quarts for 25 minutes. I'm at 2570 or so feet in Moscow, so if you are higher or lower than that adjust each by 5 minutes. It makes a lovely snowy day winter treat!
