So, I tested the ripeness of my melons the other day and cut into a watermelon before it's prime :(
The good news is that is has a firm and pleasant texture, and tastes exactly like a zestier version of a raw cucumber. It isn't really sour, just *not sweet* like a melon should be.

I think it'd be a shame to waste it. Does anyone have some good ideas for a recipe or two that uses a large quantity of cucumber that I may be able to sub this melon for?

Ok, here is the plan: I made yogurt yesterday so I'm going to tweak a chilled cucumber soup recipe and sub the melon in and I'll let you know how it goes!

Then cook on! Why not just make a salad with tomatoes, red wine vinegar, a little sugar and fresh oregano and onion?

I was always told that green melons would give you a belly ache. I don't know if that's true or not, but I never tried to find out.
