I've tried a couple different ones out of my books, one was way too dry. Another was super bland because the author wanted it to be "healthier".
Doesn't anyone make moist and savory spiced zucchini bread anymore? :(

I've made this 4 times in the last 2 weeks. It disappears as if by magic! I pulled a loaf out of the oven an hour ago, and it's almost gone. I do a few things differently, tho. Replace 1 c ap flour with whole wheat, cut the sugar down to 1 cup, and if you want, applesauce replaces most or all of the oil very well in this recipe. Adding a little nutmeg makes it sort of Christmas-y. We LOVE this recipe!!

ooh I have a really good one - I will find it and post tomorrow. It calls for flaked coconut which absorbs the extra moisture - but it is still a super-moist bread. I'll be back....

Jen,

I posted my recipe for zucchini muffins on my blog awhile back.

http://lazyjbarcfarm.blogspot.com/2011/06/zucchini-muffins.html

You could easily make it into bread by lowering the oven temperature to 350 or 375 and baking longer. I really think the dried lemon peel and apple pie spice add a lot to this recipe!
