I've tried a couple different ones out of my books, one was way too dry. Another was super bland because the author wanted it to be "healthier". Doesn't anyone make moist and savory spiced zucchini bread anymore? :(

ooh I have a really good one - I will find it and post tomorrow. It calls for flaked coconut which absorbs the extra moisture - but it is still a super-moist bread. I'll be back....

I've made this 4 times in the last 2 weeks. It disappears as if by magic! I pulled a loaf out of the oven an hour ago, and it's almost gone. I do a few things differently, tho. Replace 1 c ap flour with whole wheat, cut the sugar down to 1 cup, and if you want, applesauce replaces most or all of the oil very well in this recipe. Adding a little nutmeg makes it sort of Christmas-y. We LOVE this recipe!!
