Posted - Jun 12 2011 : 8:11:19 PMI just finished making some of my favorite balsamic strawberry jam. I let the strawberries sit in 1 cup of the sugar all day- about 15 hours. Those silly strawberries still floated to the top of my jars!
The last time this happened I reprocessed all the jars with a second dosage of pectin and they came out perfectly. Was the addition of pectin needed?
I'll reprocess these tomorrow after my son is at school so I can buy some more pectin if I need it.
