I just tried my very first dandelion jelly. Yum!

It turned out syrup, but reboiled it and added more pectin. This is a great experience for my kids. They helped with the dandelions.

I will definitely make this again.

Just an update: I got first place ribbon AND Best of Show at the county fair with my Dandelion Jelly!!!!

Question-
I am thinking of trying a freezer jam, i usually do regular jam/jelly with a water bath. What kind of containers can i use for freezer jam when i am trying to rid my kitchen of plastic containers? Can i freeze in mason jars? and would it require water bath first to seal the jar?

Hi Gals,

Loved reading about the dandelion jelly and salads. Heather, would you please post the sprout salad recipe? My husband uses fertilizer with weed killer so i don't think i will be trying the jelly this year, i will have to pick them the next year before he puts that stuff down.

I tried using the Chillover for the first time with the Izzy brand drinks- so good- it's in MJF cookbook. It was so refreshing on a hot day, like having a cold grapefruit without all the hassel!

My mother-in-law brought me a recipe she found for rhubarb freezer jam using blueberry pie filling and jello. I wonder if the Chillover would work just the same??

I think I will try to make the jelly this week end I am sure my husband will think I am crazy. When I was a teenager my friend's father told us how to make dandelion wine,talk about being sick. Of course we were sneaking and drunk to much at one time. The jelly is more my style now.

My husband and I bought dandelion jelly while in Amish country as well. That's when I decided to make it myself, since it was so delicious.

We hope to have the change to make it again.

we have an amish community by me and they have dandalion jelly for sale and I buy it all the time. It is my favorite jelly!!! It is really good, you will like it!!!

I just finished my very first batch of dandelion jelly. I used liquid pectin for the first time too. How long before I know if it is setting up? The jelly is so beautifully clear and such a pretty color. I am so excited. I really hope it turns out!

No such thing as a stupid question! Only stupid answers :) Yeah, Dandelion's are the little yellow flowers that a lot of people try to get rid of and after they are done blooming they form the puffy white seed heads that you can blow in the wind. Its really neat. I was so glad to find out our new farmhouse has tons of dandelions. :) I like them!

no biggie, I had not looked through the book for a while so it was fun!!! I ordered the outpost one from the library so I can get the other recipes too. If you still want them when I get the book in a few days I will give you the recipes...

Ahh, I can't believe I got the books messed up!!! I was so certain it was in the ideabook. I'm so sorry Beverley for having you go through all the trouble you did! Thankyou so much for the recipes you posted though. I'm going to try to make some this week, hoping it will turn out! My problem is getting roses that haven't been sprayed with that stuff to make the flowers last longer. I'm so rural all the flowers thus far have been sprayed. I think I will just make regular dandelion jelly and try to grow my own roses this year and go from there. Thanks so much!

Oh, thanks! I have that book...will check it out. Was ready to do the jam and now the weather is cold and wet again and I don't feel like going out to pick them. (Whine) Where is summer??!! Anyway, how does the jam taste? I mentioned it to my husband and a friend and they both made funny faces at me. It looks pretty...

Hey ladies, the Dandelion & Rose jelly recipe along with other Dandelion recipes are in Mary Janes Outpost book pages 203-207. I just happened to be looking through the book this rainy afternoon. I think I might try the recipes as well.

I had it at an Amish restaurant. I did not get a recipe but the gravy tasted like there was bits of bacon in it, and the dandelion that was in it contained snips of the leaves. When you eat mashed potatoes, you want a creamy gravy. This gravy has a different texture due to the leaves in it. It was okay, but not something I'd want on my creamy potatoes. Maybe it would be good on a meat? Or a vegetable?

Most of the recipes I found contained hard boiled eggs too.

In May, there are festivals in Amish Country when dandelions are at their peak. They make dandelion wines, jellies, etc. (Berlin,Ohio area)

I made mine right after the kids picked the dandelions. There is also a recipe in MJF Outpost book.

Yes, they are safe to eat if you do not put chemicals on them. We are surrounded by crops, so we pick them prior to the farmer's spraying nearby.

I have recently tasted dandelion salsa that was homemade in Amish country. I may consider making that too. Another item I have tasted was dandelion gravy over mashed potatoes.

Thanks for the recipe...I've been wanting to try this. Dandelion weeds are safe to eat, correct? Just pulled out of my weedy yard (we are getting the lawn mower on Wednesday, my yard looks a fright)! Anyway, we do not spray our yard with anything. Do you just cut the tops off of the flowers? Do you have to make the jam immediately after picking?
