I just tried my very first dandelion jelly. Yum!

It turned out syrup, but reboiled it and added more pectin. This is a great experience for my kids. They helped with the dandelions.

I will definitely make this again.

I just made some for the first time this week too! Came out runny the first time but, just like you, I reboiled with added pectin and it was great; tastes like honey...

I have been wanting to do this....but we have very few dandelions! I'll have to rob some! LOL Dandelions are so good for you. Not sure if that holds true once they are "cooked" though.

Been seriously thinkin' 'bout it. Just haven't gotten the courage to take the jump. Maybe now I will. Has anyone on this page made violet jelly? If so, how does it taste? And how long should I let them steep? I picked some the other day and have let them stay in the refrigerator.

what issue is the dandelion jelly in? Because I'm also wanting to try the dandelion roots to make coffee. I've seen it in a passed issue of maryjanes. Hope someone can help me to find this issue. for jelly and coffee.

I second that! I've been searching for this recipe for a couple of days. I thought I had seen it in one of maryjanes issues.
I'm going to try making dandelion coffee with the roots. They say it is very good for your liver. I have had up and down with my liver count. So it will be worth the try.

This is what I used and it turned out great:
Ingredients

* 2 cups dandelion blossoms
* 1 quart water
* 1 package (1-3/4 ounces) powdered fruit pectin
* 4 1/2 cups sugar
* 2 tablespoons lemon juice

Directions

* In a large saucepan, bring dandelion blossoms and water to a boil; boil for 4 minutes. Leave to steep for at least 4-5 hours, overnight is best. Line a strainer with cheesecloth and place over a bowl. Strain dandelion mixture through prepared strainer, reserving 3 cups liquid. Discard blossoms.
* In a sauce pan, combine dandelion liquid and pectin. Bring to a full rolling boil, stirring constantly. Add sugar and lemon juice; return to a full rolling boil. Boil until you get the proper consistency (that dripping off the spoon thing), about 30-40 mins.
* Remove from the heat and ladle hot mixture into hot sterilized half-pint jars, leaving 1/4-in. head space. Remove air bubbles; wipe rims and adjust lids. Process for 10 minutes in a boiling-water canner. Yield: about 5 half-pints.

Dandelions are still good for you after cooked, dandelion greens are well known as being healthy for you for many generations in Italy. However, I must say I do love a fresh dandelion sprout salad! mmmm

I am not sure but I would suppose by the way they look in the package that I have bought them at the store in that they sprout like any other sprouts. (probably need to pick the white heads, and plant the seeds in a bit of wet paper towels). I've always just bought my sprouts locally though at our local health food store, called Food For Thought.

well here i go. we picked last night. i washed them and took off the green part on the bloom. labor intensive. so do you girls take the green back off each flower? can i just wash the blooms and steep? i have some of the flower petals in water now. i am going to use the recipe on first page this afternoon. hope it turns out good for me. thanks for the recipe and ideas here. happy days sherrye

So glad I found this thread!!! Question: Do anyone of you happen to have the recipe for Dandelion Yellow Rose Jelly? I can't afford to buy MaryJane's Ideabook but I was able to rent it from the library but I forgot to jot down the recipe for it before I returned it. Now there are a bazillion holds on it! Agh! The dandelions are just starting to bloom here so I don't want to miss out! Thanks in advance!!

Sounds weird but if neighbors are mowing their lawns already then dandelions will be gone BUT I raided the local high school yard and parks as well. I know they do not treat their lawns with pesticides and they had tons...Just a thought...

I looked in the idea book but can not find the recipe for the dandylion yellow rose jelly. I will look some more maybe you remember a hint that will help me find it??

Beverley: I can't exactly remember where it was, I think it was in the last half of the book though. I might have mixed up the name too. It had yellow rose petals and dandelions. I'm pretty sure the background was white and I think it was on a page on the right hand side of the book. I also think it was on the top half of the page. I hope that helps!
