Can you make rhubarb jelly from frozen rhubarb? Does anyone have any recipes.
I have an abundance of frozen rhubarb from last year & need to use it up.

Here's the rhubarb jam recipe :)

2 1/2 lbs rhubarb, sliced thinly or chopped. Mix with 1 cup water in saucepan and bring to boil, simmer for about a minute until soft, and then measure out 4 1/2 cups of this prepared rhubarb and return to saucepan. Stir in 6 1/2 c sugar and bring to hard boil. Boil hard for 1 minute, add 1 pouch of liquid Certo, return to boil and boil hard for 1 minute. Remove from heat and place into warm clean jars; process in boiling water bath for 10 min.

Yummmmmm!!

I made rhubarb marmalade last year from frozen rhubarb, it turned out great.

My grandmother used to make rhubarb crunch cake. I'll have to see if we have the recipe. We planted rhubarb 2 years ago, so we have two wait one more year to harvest it.

Sheila, Any chance you could give us all your rhubarb jam recipe? I have some rhubarb in the fridge and I can't make up my mind on what to make. If I have everything in stock, I think I'd like to make jam.

I have never made rhubarb jelly if it were previously frozen. I do know that rhubarb loses it's crunchy texture when it defrosts. I don't think that the rhubarb can withstand the heat of the boil.

I've never made just straight rhubarb jelly before but I have cooked it with apples and made apple/rhubarb sauce that turned out pretty good. I also made rhubarb/strawberry preserves and I got that recipe out of a blue ball canning book.
