Judith, I'd love to know what you think! The mint really makes it--something about in combination with the lime, it's just so "bright" tasting. Really, really wonderful.

It's always a springtime favorite and my in-laws and extended in-laws are a little "hoighty" so if they LOVE it and request it, I figure, it's a keeper!

Could it be a fruit salad? My Easter contribution has always been a fruit salad (any kind, but I use a mix of strawberry, blueberry, kiwi, green and red grapes and melon) with a dressing/syrup of 1/3 cup fresh lime juice; 1/3 cup honey and 1/3 cup minced fresh mint. Mix and chill. It's incredible, incredibly easy and there is NEVER any left.
