Posted - Apr 18 2011 : 08:00:16 AM We are (happily) changing plans to have a nice Easter at our house, with my mom, so I want to make it lovely, but simple.
I'm making Spinach-Bacon rolls ups for an appetizer and don't forget the hard boiled eggs!
For the entree Thyme and Honey glazed baked organic (and local!) ham; Grilled Asparagus; Potato Gratin with Gouda and herbs (the potatoes organic, the gouda organic and local) Mac and cheese (for Violet, who won't eat anything) Rolls from a local bakery
My mom is making a chocolate cake for dessert.

Posted - Apr 26 2011 : 11:30:30 AM Aww, thank you, Judith. It's hard to photograph food, especially when there's nothing but storm clouds out the window! It's a humble spread, but it was delicious, and my husband and mom had seconds. I was so happy the lilacs were in bloom--perfect addition!

I know a lot of people don't like haggis. But I think my hubby and I figured out why. When you go to any Highland Games and someone is serving it, is usually is COLD and BLAND! No wonder!!!!! It's gotta be HOT and TASTY, like with herbs and spices! We've been to Scotland more than once and have NEVER had the awful stuff there . . only here in America at the games. CJ

Not that I have any doubt, but it's often hard to please everyone, but it's always a hit with everyone, here! Our dinner was really lovely--and simple, and easy and since it only for the 4 of us, it didn't take long to clean up afterwards! It turns out my ham that I ordered from the CSA was FRESH, not pre-cooked, and I didn't look at it before hand, so I had to sortof regroup my timeline but it turned out beautifully (after I stopped panicking of course :)). It felt really wonderful to serve the people I love farm fresh, local, organic foods!

Posted - Apr 25 2011 : 10:18:33 AM Well, Easter get-together was wonderful! 20 for egg hunt and supper. You were right, FebruaryViolet, The fruit salad (I doubled the recipe) was gone in a flash! I only had one little container left to go home with SIL. And, the grilled asparagus was gone completely (4 large bundles) Even the little ones loved it. And, Countryteacher, your oatmeal brownies were a real success! I made to 9x13 pans. Gone! Thank you farm girl sisters!

For our Easter dinner we had: - Hubby's Homemade Haggis - Baked potatoes - Sauteed carrots - Home canned green beans
I made a Walnut Banana Cake and served strawberry ice cream with it.
NOT your traditional Easter meal!! But it was YUMMY!!!! CJ

Penny, that sounds ideal. I love a picnic, and there's nothing better than a ham sammich! My husband's grandmother always made good German potato salad (or course, she also made Irish, too--her mother was Irish, her father German) so they were BOTH at every gathering :)

Posted - Apr 22 2011 : 12:11:52 PM gosh everyone is working so hard at this! and all sound yummo--we decided since i have so much homework and it's just the two of us-we are having ham sandwiches! michael makes a tremendous potato salad like a German but cold and we'll have some beans...not sure about dessert yet- i think it will be fun!!!! a picnic!!!!

Thanks Jonni - I have not had a holiday off in some 18 years and so it sure will be different..
Jenny I with your kids I still love dyeing eggs but that is because I love dyeing all kinds of things. I have the blue/green layers so the color is already there but no one is saying we can't overdye...
Reminds me of the first East we had here - had our first bottle lamb in the kitchen and a house full of folks for dinner. As we sat down to a nice roasted leg of lamb I was with one hand feeding the lamb and trying to eat my dinner. I had to promise the guests that the lamb in the oven was in no way a Larkspur Funny Farm Lamb. Strange dinner but the start of many with a sweet on in the kitchen... Enjoy your dinners and families ladies.

@Judith--that sounds like a gorgeous dinner. Perfect, in fact. I eat meat, now, but was a vegetarian for 10 years and I really don't "have" to have meat--your's is a meal I'd sit down to happily! I do hope you enjoy the fruit salad recipe because it's a keeper. You won't go back to the others!
@Grace, I'm so glad your son is cooking and that you don't have to worry yourself over food and taking care of anyone but your critters and you that day. Sit down and take a load off, sister!!
@Jenny--I love dying eggs and was so sad about "not" doing it a few years ago--I really loved that part of my childhood and well, guess I'm still a kid. Those were such wonderful memories, I'd like to keep them going. I'm glad your kids still see the wonder in it.
@Cathy--that's awesome! You can always make veggie enchiladas with asparagus!
@Sue--our meals sound almost alike. What are symphony brownies? Sounds like they'd be right up my husband's alley!!
