Posted - Jan 05 2011 : 12:15:32 PM I just baked the all worst tasting carrot cake, it's spicey enough but oh so dry. Does anyone have a great receipe for carrot that they are willing to share? Or helpful hints? Hugs to all, Carmen MJFG #1443

I have a question for Katherine on the substitution of applesauce and the sugar. How much applesauce in place of the oil? For substituing Splenda which I would like to use instead, is it equal amounts for the sugar or just half/half ratio.

Posted - Jan 08 2011 : 07:54:33 AM If you would like to cut down on oil, you can use unsweetened applesauce. Also, you can replace half of the sugar with Splenda, stevia, or other substitute sweeteners.

1 1/2 c. canola oil 2 C. sugar 4 eggs 2 C. flour 2 tsp. baking powder 1 1/2 tsp baking soda 1 tsp salt 2 tsp cinnamon 2 Cups finely grated carrot 1 sm. can crushed pineapple
Combine first 3 ingredients in bowl; blend well. Sift next 5 ingredients and add to wet ingredients; beat well (I just use a wooden spoon). Add carrots & pineapple. (you can add 1/2. cup chopped nuts if you wish). Mix well. Pour into a greased 9 x 13 pan. Bake at 350 for 35 to 40 min or until cake tests done. Cool.
Cream Cheese Frosting
1 8 oz pkg Cream Cheese - softened slightly 1/4 c. butter softened 1 tsp vanilla 1 box powdered sugar (about 2 cups or 1 lb)
Combine in mixer bowl Beat until smooth and creamy. If too thin add a bit more sugar (humidity sometimes make it a bit thin) if you need to thin add a bit of milk
This is a really moist cake and is super easy. It's been a "trade mark" recipe for me for years. I hope you enjoy it.
Blessings, Sheri
