I just baked the all worst tasting carrot cake, it's spicey enough but oh so dry. Does anyone have a great receipe for carrot that they are willing to share? Or helpful hints? Hugs to all, Carmen MJFG #1443

Carrot Cake
1 1/2 c. canola oil 2 C. sugar 4 eggs 2 C. flour 2 tsp. baking powder 1 1/2 tsp baking soda 1 tsp salt 2 tsp cinnamon 2 Cups finely grated carrot 1 sm. can crushed pineapple
Combine first 3 ingredients in bowl; blend well. Sift next 5 ingredients and add to wet ingredients; beat well (I just use a wooden spoon). Add carrots & pineapple. (you can add 1/2. cup chopped nuts if you wish). Mix well. Pour into a greased 9 x 13 pan. Bake at 350 for 35 to 40 min or until cake tests done. Cool.
Cream Cheese Frosting
1 8 oz pkg Cream Cheese - softened slightly 1/4 c. butter softened 1 tsp vanilla 1 box powdered sugar (about 2 cups or 1 lb)
Combine in mixer bowl Beat until smooth and creamy. If too thin add a bit more sugar (humidity sometimes make it a bit thin) if you need to thin add a bit of milk
This is a really moist cake and is super easy. It's been a "trade mark" recipe for me for years. I hope you enjoy it.

If you would like to cut down on oil, you can use unsweetened applesauce. Also, you can replace half of the sugar with Splenda, stevia, or other substitute sweeteners.

I have a question for Katherine on the substitution of applesauce and the sugar. How much applesauce in place of the oil? For substituing Splenda which I would like to use instead, is it equal amounts for the sugar or just half/half ratio.
