Posted - Nov 12 2010 : 09:16:45 AM Ladies, years ago I had a 'salad' side dish made with cranberries, maybe apples, nuts, and had maybe cool whip or whipped cream mixed in? It was a fluffy jello type cranberry salad. Was great, but I have lost the recipe years ago. Anyone have an idea of what it is and have the recipe? Blessings, Linda

Posted - Nov 13 2010 : 2:53:58 PM Hi Linda! Sorry it took so long! The recipe was given to me by a dear friend. :)
Cranberry Salad
1 lb. cranberries 1 cup sugar 2 lbs. red grapes, cleaned and halved 1 cup thinly sliced celery 1 cup thinly sliced and lightly chopped apples a little bit of salt 1 can pineapple (I use pineapple tidbits) 4 small boxes of Jello of your choice - strawberry, cranberry or cranberry-raspberry, or any combination thereof ('bet this can be done using MJ's Chillover Powder and fruit juice, but I haven't tried it yet) 1/2 cup ground nuts (optional)
Grind the cranberries. Mix with sugar and set aside.
Combine grapes with celery and apples. Mix with a little salt and set aside.
Drain pineapple. Set aside. (the liquid is not used in this recipe)
Boil 5 cups of water. Mix with the 4 boxes of Jello.
Mix all the fruits and celery together with the Jello. If desired, add ground nuts on top. Refrigerate to gel.
Enjoy! :) - Nini
