 Peach BBQ sauce for canning - Blue Ribbon!

I can't remember where we were talking about me posting this recipe so here ya go.

6 cups finely chopped p[itted and peeled peaches
1 cup finely choped seeded red bell pepper
1 cup finely chopped onion
3 tbsp finely chopped garlic
1 1/4 cup honey - liquid
3/4 cup cider vinegar
1 tbsp Worcestersh**e sauce
2 tsp hot pepper flake (I didn't do these)
2 tsp dry mustard
2 tsp salt

In a large saucepan combine every everything and bring to a boil. Reduce and stir freq until it is the thickness of commercial BBQ sauce. About 25 minutes.
In boiling bath canner process for 15 minutes for 1/2 pint jars.

So I'm supposed to be packing to head off to work, but nope. The BF had extra peaches from the market and I am making BBQ sauce. I did forget the "thin" commercial sauce, so it does not thicken as much unless you cook it down a while. I love this recipe. Last year I didn't do any of the pepper, this year I am adding just touch for that added hot and loving it. One batch canned, one to go. Then back to the packing...

Made up a double batch. Amazing. So yummy. Got it all canned up this morning. I found sticking it in the oven on the lowest setting for a couple of hours last night while we went to pick up the youngest at the airport was just enough to get it nice and thick with out standing there stirring.

Thank you for the recipe. Can't wait to open back up a jar and use it!

Congrats Laurie! I had this bookmarked to try this summer. I think I'll make it today! To create a thinner consistency could you mash the peaches with a potato masher?

I canned this last night, but I have a question? Did I miss a step when I printed the recipe and instructions out? And, if not, then I have a suggestion for those who couldn't get it to thicken like commercial grade sauce: My sauce was just too chunky, even with chopping all the veggies and peaches really small. I'm not a fan of chunks in much of anything, so I blended three-quarters of the mixture and then put it back into the stock pot, boiled it until it reduced, but also added an additional 4-5 1/2 pints to my already 7. Actually, I used 12 oz tall jelly jars instead of half pints and with the pureeing, yielded about 7 12 oz. jars. The texture was more "sauce" like as well...

I say give it a try. You never know until you do. Cut the recipe in half if you want to just do a sample batch.

I entered this recipe in the fair this year and won a blue ribbon. It was my first fair entry ever so I am a bit excited. The BF loves it, and talks it up; and the peaches are just starting to come in here. I love peach season.

I have a question about the recipe.
I was gone all day and started to make the BBQ recipe tonight. By the time I was done cutting up the peaches....had to stop for chores.....and got everything assembled and on the stove it was pretty late. I cooked the sauce for about 40 minutes and it is still quite runny. I decided to turn off the stove and cool it and put it in the fridge for the night cause I need to get some sleep. I was wondering should it still be so watery and should I try cooking it down more tomorrow before I can it. I just don't want to mess it up. I tripled the recipe and don't know if that means I need to triple the time it cooks. I hope by tripling the recipe that didn't mess it up. I know your not suppose to do that with jelly and jams. I thought it would be okay with this recipe.

Well I'm off to bed will check back in the morning. I have to help a my daughter inlaw with a garage sale tomorrow. So I guess I will finish the BBQ tomorrow night. Take care.

I'm glad you all are enjoying this recipe. Lisa covered the amount and I did the same. Canned up a canner full and used the rest for dinner. I use it in meatloaf too. I dump the whole 1/2 pint jar, break up some crackers (gluten free now) and add burger. It's wonderful.

I can't wait to try this. Lisa told me about this recipe a few days ago. My husband just picked up another basket of peaches on his way to work from the peach lady and I am going to give it a try. Its sounds really good. I may have to buy even more peaches so I can make some for x-mas presents. Thanks so much.
