When I visit the Amish area here in PA I often buy meadow tea at the local farm stands. It tastes like spearmint and is quite sweet. Does anyone know how to make this? It is delicious, and I've never had it anywhere else but Lancaster County, PA.

This is the original recipe I received from my Amish friend in Lancaster County, PA; however, I prefer it with little or no lemon juice, so you will need to experiment for your own taste!


Meadow Tea
1 cup sugar
1 pint water
1 cup fresh tea leaves (peppermint or spearmint)
juice of one lemon water
Stir sugar and pint of water together in a saucepan and bring to a boil. Pour boiling syrup over tea leaves and let steep 20 minutes. Remove the leaves and let tea cool. Add the lemon juice and enough water to make 1/2 gallon of tea. Serve either hot or cold. Makes 1/2 gallon.

Can anyone share the recipe for Meadow tea? I just heard about this & would love to try making some. I tried to find Calicogirl's blog, but not able to bring anything up.

Yumm!!! Sounds good!!! I have heard of Meadow Tea but I always thought of it more like that roadside tea Sarah mentioned. Neat!

I finally made some Meadow Tea from Calicogirl's recipe. I love it! So refreshing for these hot summer days. I will keep my freezer stocked with the concentrate for sure.

On a different note, in the UK some of the travellers make "verge Tea" which is basically nettle tips, mint, raspberry leaves or whatever edible plant you find on the verge or roadside. (Obviously not RIGHT next to the road). It always strikes me as a gypsy kind of thing...love it!

We LOVE Meadow Tea too! It's so good and refreshing in the summer especially after working outside :)
