I cant afford to buy mary janes flour (GLUTEN FREE ONE) . I have 6 children with gluten intolerance. Can anyone give me her recipe or something like it. It is awesome and the best I ever used and there are not many ingredients in it and I dont know how much of ebverything is in it. Advice? BTW I have gone through like 6 LARGE bags of it. (iTS JUST SO MUCH MONEY.... FOR ME...)

did you just substitute millet flour for wheat? Did you add the xanthum gum?

I'm not celiac, but I am wheat sensitive. Every time I eat a lot of wheat I get so tired I can't function and I gain weight. Of course my family thinks I am nuts. Try "The Best Ever Wheat and Gluten Free Baking Book" by Mary Ann Wenniger. The recipes don't use baking mixes. She gives measurements just for that recipe. I hate having to make up mixes and then have them sitting around. A lot of wheat recipes can be converted to gluten free. I converted a brownie one and my friends don't know the difference when they eat them. I like millet flour the best. It's light and fluffy with no aftertaste.

I made buckwheat pancakes just substituting the buckwheat flour for the wheat flour in the recipe and they came out well! Thanks Kathy for the recipes. Keep them coming! I find that I don't do a lot of baked goods anymore because of all the various ingredients in the recipes. I like simple.

Thank you all! Well, you arre all speaking my language...I have been living organic, and very low sugar for the family for years, except for the grandparents bringing over sugar stuff, but for the most part yes, I am with you all...I just got tired of experimenting with all the great different flours because mary janes almost tastes like real regular flour!!....right now i am following a meat and veggie candida diet , awesome!!!

marjean, Would you like to exchange gluten free recipes? I have a couple of wonderful dessert recipes I take to family reunions that do not taste like gluten free. I bet you have favorites too. I am also looking to expand my horizons. Anyone else that would like to post recipes are welcome too.

I was going to mention rice flour too. It is available in most grocery and ethnic stores. Persian baked desserts are always made with rice flour and it is quite yummy.

It is tough. I just discovered I have to get off gluten, sugars, and lots of other things too and the hardest part was giving up bread. For the most part I don't make a lot of baked goods because it is confusing, but I picked up the latest copy of "Living WIthout", a magazine from the health food store. They have just the recipe for you.

All purpose flour blend: 1/2 cup rice flour, 1/4 cup tapioca starch/flour, 1/4 cornstarch or potato starch.

Self-rising flour blend: 1 1/4 cup white sorghum flour, 1 1/4 cup white rice flour, 1/2 cup tapioca starch/flour, 2 teaspoons xantham or guar gum, 4 tsp baking powder, 1/2 tsp salt

I haven't used any of these as tapioca is also on my not to do list. As Marsha said the sweeteners are also ones to watch. I wasn't getting better and couldn't figure it out until I talked with the nutritionist again. Yup, the sugar feeds the yeast which I react to.

Another tip. I only buy organic because it is the best for you. And if you have kids with allergies already you want to keep them off all chemicals and anti-biotics and hormones. Don't get them any dental fillings with mercury. Rotate their foods every four days. So don't give them the same thing daily. That will help build up their immune system. And, give them probiotics daily.
I have been ill all my life (47) and know what to do and what not to do. If you can put them on a sugar free diet as well, then you will give them a good bill of health from now on. Use fruit, fructose, agave and honey.
Every time my DD gets off that routine she gets sick. Classic sore throat and congestion every time. The doctor always says the same thing. Is she eating sugar again? It weakens the immune system.

If you still have a bag look at the label and write down all the ingredients. Then go to the store and buy them. Then measure out each one for the recipe you want to make. That's all there is to it! I've done that for years and it works like everytime. I have celiac disease and have been on a wheat free diet for years.
