Do any of you ladies have a good recipe for 'Pickled Eggs'?

I'm the only one in my family that loves pickled eggs.... I can remember my mom's mother making them when I was young, but honestly hadn't had one in years until a few years ago, when a co-worker gave me her recipe.
Boil some eggs. When they are cool, put them into a jar in which all the pickles have been eaten, but the juice is still left. Put the top on, put them in the fridge, and wait at least 4 days before eating.
That's it!!! lol! So easy, but really good too!
I would like to try them from scratch though this year.

EASY! equal parts of sugar, vinegar, beet juice, a couple cinnamon sticks(optional). Bring to boil. Pour over hardboiled eggs. I put mine in a gallon jar. The longer they sit the better they are!

I like to can up some pickled eggs each year..doing some this week. My second son LOVES them. My hens are banties and lay smallish eggs so they are perfect for this! I use a recipe from the Martha Stewart Christmas book that she did pickled quail eggs with...very good. I will be happy to post the recipe if anyone wants it.
