Red Onion Jam
3 cups Red onions 1 ½ cups apple juice ½ cup Red wine vinegar 1-½ teaspoons rubbed sage ½ teaspoon black pepper 4 cups granulated sugar ¾ cup firmly packed light brown sugar 1 (1.75 ounce) package of powdered fruit pectin 1/2 teaspoon butter
1)Peel, quarter and thinly slice red onions. Measure 3 cups into a 6-8 quart saucepan. Stir in apple juice, vinegar, sage, and pepper. 2)Measure sugars in a different bowl. 3)Stir in fruit pectin into onion mixture in stockpot. Add butter. Over high heat, bring mixture to a full, rolling boil stirring constantly. 4)Quickly stir in sugars. Return to a full, rolling boil, and boil exactly 5 minutes, stirring constantly. 5)Remove from heat. Skim off any foam with a metal spoon. Ladle quickly into hot, sterilized half pint jars, filling to within 1/8-inch of the tops. Wipe jar rims and threads. Cover with lids and screw bands tightly. Process in boiling water bath for 5 minutes. Yield: 5-6 (half-pint) jars.
Serve with cream cheese and crackers or as a glaze for roasted chicken. We also like it on Roast beef sandwiched with Havarti on grilled Sourdough :)

Posted - Apr 26 2010 : 5:00:27 PM This sounds wonderful......I bet this would be good to spoon the jam over a brick of softened cream cheese and eat as an appetizer with crackers. I try to find pepper jelly over the holidays and spoon over cream cheese. It makes a pretty and easy dish! Smiles, Beth

I use dried. If you decide to try fresh I would definitely reduce the amount. Hope you like it!

My computer is upstairs and I can smell all the yummy up here! I think it could be a glaze for just about anything--I was going to make poached salmon for dinner, now it will be a nice glazed salmon! Thanks again Sharon, this one is a keeper for sure!

After my Grandma passed away, my mom gave me my Grandmother's old 4"x 2" cutting board that had that exact quote on it. I keep it on my windowsill above the kitchen sink. I read it everyday!

By the way, girls . . . I've had Sharon's Red Onion Jam and it is WONDERFUL!!!!! We like it on white corn tortilla chips with melted extra sharp white cheddar!!!! YUMMY!!! Good on all sorts of things . . . YUP it is!!! CJ

By the way Amy Grace, your signature line is such a good reminder for me! I tend to buy more than I ought to with dollars I don't necessarily have. Every time I read one of your posts it's a gentle reminder that I carry with me when I'm out shopping. Gotta say I've recited it quite a few times since I found this forum.
