Has anyone ever made lavender jelly and do you have a recipe? I have a ton of lavender and I would really like to make some jelly from it.

I AM going to make some too. At the first MaryJane Farm Fest there was some and always wished I had gotten the recipe. I found this recipe and was going to just send the recipe but the picture of jellies is wonderful. MB

I don't have a recipe yet, but I'm going to give it a try pretty soon adapting some of the other recipes I've seen here on violets and dandelions, etc. Most of those recipes call for a 1:1 ratio of blooms to boiling water to make the infusion, but 2 cups of lavender buds seems like a lot since the flavor is bound to be really strong. I have some lavender sugar I made that I may try to use in place of the sugar and use a different flavor in place of the infusion...lemon or mint maybe? I already have mint going nuts in the garden. Hmmm, lavender mint jelly. What do you think?
