Hello Ladies! This is actually Kate, Kim's daughter, using her username! (With permission, of course!) I'm working on making Dandelion Jelly, as shown in Mary Jane's "Outpost" book... however, I've had LOTS of trouble getting it to set up! I tried it first with the liquid pectin, as called for, and when that didn't set, I tried it again with powdered pectin. And three boxes of powdered pectin later, I hope I have succeeded. There's no telling though, it's still kind of liquid-like, but shows signs of having something of a jell.

I wonder if anyone else has tried this recipe? Could I have cooked it too long? Has anyone else had this same problem, and did you figure out how to get it to set?

I followed Aunt Jenny's recipe and have a very thick dandelion syrup, but not jelly, either. Maybe our dandelions are to blame :)
It's delicious and I can't wait for the next flush of dandelions to try again. She did specify Certo liquid pectin (no substitutions) and I substituted Ball liquid pectin in my impatience to try this. Sooo, like I said, I can't wait to try, try again. I'm going to buy Certo, another bag of sugar, and watch for those tiny jelly jars at the big church rummage tomorrow!

Prayer costs nothing, but is worth the most.

My dandelion jelly never did set up all the way either-but it's still yummy! It's more of a jam, but that's fine with me!

Starbucks and sushi to green fried tomatoes and corn pudding-I wouldn't change it for the world.

I just made 2 more batches of dandelion jelly this morning. I used Aunt Jenny's recipe. It's on here somewhere under dandelion jelly recipe. I'll pull it back up for you to see it.

I had problems with the violet jelly. I went back through the recipe and how I did it with my husband and it turns out I didn't add enough sugar. Most jelly recipes are very tempermental if you don't have everything just right.

i have not seen the recipe. with regular jelly you must use an acid like lemon juice. also you must use the excact amount of sugar. boil to the right minute.just a thought sherrye
