I went ahead these two past days and made some with the recipe from Prairieland Herbs.(http://www.prairielandherbs.com/violetjelly.htm)

Kristen, I did find out that you CANT use the yellow, they actually arnt edable.
Julie, I know you can suck the middle out of lilacs, and they taste like honey, but are the flowers edable? if so, that great news! would love to try that.

I don't have any violets... but, I do have lilacs. I am going to try making lilac jelly when the lilacs come into bloom. Wish me luck!

I think that if you leave the juice in the fridge a few days then make the jelly it tastes a little more flowery. I did that with the dandelion too. And it tastes more like dandelion tea tastes. Really good. I just made 5 more jars of violet jelly. I can hear them pinging now.

Robin, I am NO expert, but I am not too sure about using the nursery violets. The ones I am using are just wild flowers in the yard. I hope someone else can tell you about the nursery flowers.

I found the violets, picked, made the jelly and it is stunningly beautifull.. but did I put to much sugar or something because it didnt have flavor, just sort of tasted like sugar to my daugher and I. Did I do something wrong or is that the way everyones turned out?

Ok girls, I actually found YELLOW, yes yellown violets at a garden center, but I dont know what to make OF them... what do you all think? They smelled like a regular violet, but they were yellow with a slight lavender rim. They had four packs which I am sure I would eventually get two cups of flowers of.. maybe. How about pansies, they are edable, think you can make jelly with pansies? has anyone ever tried it?

Anita I can just picture the lovely violet syrup in my mind. Picture it drizzed over a slice of angle food cake, or white choclate cheese cake and toped with a sugared pansie or even a sugared violet! I would pick more, make the jelly and save the syrup. Now you have the best of both worlds :)

Good day to all! I made my violet jelly yesterday, accidentally used one pkg of liquid instead of two so it came out more like a syrup. At first I was really upset with myself (that was a lot of picking resulting in a sore back, LOL!) But it is so gorgeous, and I got thinking...sometimes mistakes lead to interesting things. Perhaps my "syrup" could be stirred into green tea, or used in refreshing fizzy summer drinks, or simply poured over biscuits or scones or pancakes. Anyhoo, I suppose I could put the syrup back into a saucepan, add another pkg of pectin and redo the jars, I bet it would work just fine. Now I'm trying to decide....leave it as a syrup and pick another batch for jelly...hmmmm. what to do. Tons of violet are growing by the river where I live just a couple of blocks from my house. My dandelion jelly didn't set very well-I'll have to try it again this weekend-I'm going to do the little jelly jars, I believe.

I just made another batch of violet jelly. And it's so wierd. No 2 batches ever turn out the same. Last one I made I got 4 full jars and a half of another. tonight I got 5 very full jars. Does that happen to anyone else? I just never know. But it's so pretty. I'm going to have to go get more sugar tomorrow and make more dandelion jelly. I love it!

Just made my dandelion jelly this afternoon.. How yummy! A beautiful golden color with a sweet honey taste! I was new to the whole jelly out of "weeds" idea... but I am hooked! I was driving around the neighborhood today, and I wanted to pick everyone's dandelions!!
I found 1 violet so far, not quite enough to make jelly! But I'll keep looking!

My violet jelly has sort of a berry taste to it! Almost strawberry-melon. Isn't that funny!?

I made some too this weekend with the liquid Certo. Mine has a slightly grape taste. Is that what yours tastes like too??
I agree, it is gorgeous & very clear.
I buy these $1 candles at the dollar store that come in these teeny canning jars, burn the candle, clean out the jar & then use these for my jellies.
Sounds like Violet had a special treat!

What a weekend for the Violets!!! I put up 30 1/2 pint jelly jars this week (all while working full time!). Jus and Violet were my "pickers" and he would boil the water to steep the flower heads, and I would come home and strain the infusion and start on the batch from the previous day. We could STILL make about 30 more pints, I think. I think I definitely prefer the liquid Certo to the powder, it just makes a lighter, clearer jelly.

Last night, we had friends over for an engagement party, and Jus decided he was going to make Violet Vodka tonics for cocktails, so he made a simple syrup Saturday night and we sampled it (without the Vodka) and had Italian sodas with the violet syrup. What a pretty, pretty drink!!! Even our little (real live) Violet had her own. She loved it!!!

We gave our good friends some jelly Friday night and they just couldn't believe how cool it was. Tom kept saying, "yeah, I know the color is violet, but what's it made of?"

I read that the dandelion infusion will last 24 hours in the fridge. I have to run to the store myself and get more of the liquid pectin! Does anyone add the food coloring, or do you just go with what God made it?

Yes...it's very blue to start with until you put the lemon juice in and then it instantly changes color. It's beautiful!

Found enough violets in my yard and made the infusion. It's blue, blue ,blue. Did yours look blue to start with? Have to find my jars and sterilize them.

I had to mow today. It just about made me sick. But first I ran out there and picked all the dandelions and violets I could get. I went ahead and poured the boiling water over the flowers and let them steep several hours. I then strained the flowers through a sieve and put the juice in quart jars in the fridge. Now how long will this last before it goes bad? I have to go back to the store to get more liquid pectin.

And the day before yesterday the front yard was full of dandelions. Yesterday I wanted some tea and went out there to pick some and there was not a one yellow flower. But today the yard is full again.

Huh! Isn't that weird!? I'll try stirring it more next time-it's still a GORGEOUS fuscia though! I think maybe steeping them longer will help with getting them a deeper purple, but, I think the color is beautiful anyway!

Meg, not sure about the bubbles.. I usually stir my jelly a little when I romove it from the heat, if any remaining bubble are still visable when I ladle it into jars I use a stick to remove them.

I did it!!! YAY! I only had pint jars, so, I canned it in those-I think it would be MUCH better suited to jelly jar or half pints, like the recipe calls for.

My jelly turned out Fushia! Not a true purple, but, it really turned a beautiful color.

Now here's my question: My jelly had millions of little bubbles in it. Did I cook it too long?
