Buttermilk substitute in a pinch: Add a dash of vinegar to the milk for a nice sour note!

Just substitute the budget mix for the flour, baking powder and salt called for in your favorite recipe. It should work just fine.

Will this recipe work if you do not like sweet corn bread? I use bacon grease, white corn meal, egg, and buttermilk but, I do have the budget mix.

Here's a recipe for skillet cornbread.

Buttermilk Corn Bread
1 cup Budget Mix
1 cup cornmeal
1/4 cup sugar
1/3 cup vegetable oil
1 egg
1 cup buttermilk

Preheat oven to 400 degrees. Lightly grease a 10-inch cast iron skillet. Mix dry ingredients. Add oil, egg and buttermilk; stir until just blended. Pour into prepared skillet. Bake for 25 to 30 minutes.
