Here's a recipe for skillet cornbread.
Buttermilk Corn Bread 1 cup Budget Mix 1 cup cornmeal 1/4 cup sugar 1/3 cup vegetable oil 1 egg 1 cup buttermilk
Preheat oven to 400 degrees. Lightly grease a 10-inch cast iron skillet. Mix dry ingredients. Add oil, egg and buttermilk; stir until just blended. Pour into prepared skillet. Bake for 25 to 30 minutes.

Will this recipe work if you do not like sweet corn bread? I use bacon grease, white corn meal, egg, and buttermilk but, I do have the budget mix. |

Just substitute the budget mix for the flour, baking powder and salt called for in your favorite recipe. It should work just fine.

Buttermilk substitute in a pinch: Add a dash of vinegar to the milk for a nice sour note!
