February is the perfect time to be in the kitchen... It was suggested that we work on self sufficiency, but since so much of that is geared for fall harvest.. how about we jump into:

1) Farm Kitchen ~ Know your food

Oh, I am reading it. I am about 4 chapters in I think and it is getting a little more about gardening, telling stories and not so preachy/political. I mean, I know she is trying to get a message across about where food comes from but some of the beginning chapters are a little boring because of it I thought.
But yes, I got it at the library and am working through it.

Tried a new kind of bakeover tonight. I did broccoli, peas, leeks and roasted turkey, with a milk gravy, topped with budget mix biscuits. Turned out great!

I'm experimenting with some chill over powder right now. We have a few cans of Mountain Dew soda that contains sugar, not corn syrup. I used that as the liquid so we'll see how it turns out. UPDATE: this turned out terrible. Another reason to give up soda.

It is sort of open to interpretation - more like a skillet dinner with a bakeover crust over the top, bake it in the oven then take it out and flip it over.

ok I am going to try and order the kitchen magazine. So basically a bakeover makeover is a stew of some type with a top crust?

I made up a bakeover last night after reading this thread! You guys are great. I used one of the recipe's posted on the first page for the crust. I used leftover potatoes and carrots from a roast I made earlier in the week, left over green beans, left over gravy and chopped up a sirloin steak and cooked it in the skillet. I mixed all the ingredients together, stretched a crust over the top and Voila!!!! Dinner!!

Now, is that actually a bake over or did I just re-creat beef pot pie? :)

Okay here we go~
The basic recipe is as follows:
1 1/2 Cups MaryJanes Organic Flour (I use 1/2 wheat/ 1/2 white) when I make it.
2 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
3 TBS butter
1/2 cup water
Mix dry ingredients. Cut in Butter. Add water, form dough into a ball, and roll out top crust.

In a skillet brown meat, and saute your veggies. Place the rolled out dough on top of the cooked meat and veggies (or whatever you want in your Bakeover). Bake for 20 minutes or so in an over that has been preheated to 425

There are no limites to the different combos one can create. It will be fun to see all the great creations. My family love I do using MJ's Scones Mix and peaches. I place peaches that I canned in a cold skillet, sprinkled some loose MJF flour over it (to firm it up) Mixed the scone mix, rolled it out and placed on the top, cooked for 20 minutes and served with homemade Ice cream.. YUMMMY!

I have the large one, but need to invest in the small one as well as my chicks are quickly flying the coop and I dont have to feed as many.

I have tried to use a glass casserole dish, but you will have to experiment with the timing and temp as I had trouble finding the right comination.

Oh, I hate when my round-to-it disappears. I can't seem to find it in my sewing room lately. A few baby quilts need to be sewn up soon but I just haven't done them yet.
I took the plunge and used that awesome February Sisterhood discount and ordered the Farm Kitchen issue of the magazine. I also got one box of the Budget Mix to try out. And while I was there I ordered the Ideabook (have been searching locally for WEEKS and can't find it), the Artists in Aprons issue and some ChillOver Powder. I figured I'd just combine all that shipping on one order and have all I need for several badges/projects at once. I saved $4.40 on the Farm Kitchen magazine - just exactly enough for a box of ChillOver Powder!
My library has a copy of Animal, Vegetable, Miracle so I'll be picking it up today for the "Know Your Food" beginner level.

I make a thinner crust and just add lots of veggies with a homemade tomato sauce. I will try and post some recipes today, so give me some time and then check back.... Congrats on the "going green badges". I have a few to submit too, but I seem to have lost my "round-to-it...LOL

Wow N@n that sounds yummy... but kind of hard on my diet! (gotta lose, doctor's orders). Anyone have a lighter BakeOver recipe to try? The few issues of the magazine I have don't have any BakeOvers, only ChillOvers.

I did however, turn in my info for the Cleaning up - Shopping Green - Beginner and Intermediate levels today. It was my first badge!

Got off to a good start with a great Makeover bakeover for dinner last night. It was sooooo yummy
It is an Italian Chicken Bakeover.
2 chicken breasts seasoned with salt, pepper, and garlic broiled until done. Allow to cool.
1/4 cup onion,sauteed in olive oil
3 toes garlic sauteed with onion.
1 small can artichoke hearts cut up into small pieces
12 Kalamata olives sliced
1 cup Magic Mix-recipe to follow

1 recipe homemade bisquit mix-recipe to follow
1/2 tsp garlic powder
1/2 tsp. oregano
1/2 cup grated parmesean cheese

combine cooked chicken,sauteed onions and garlic, artichoke hearts and olives in your trusty cast iron skillet.
pour Magic mix over.

stir up your homemade bisquit mix and drop by spoonful on top.
bake at 350 for 30-35 minutes or until bisquits are done and golden brown.


Magic mix recipe (used as thickening agent for many things)
2 1/3 cups powdered milk
1 cup all purpose flour
1 cup (2 sticks) butter at room temperature.
Combine all in mixer bowl and mix until it resembles corn meal.
Store in tightly covered jar in frig.
For one cup mix called for in above recipe, mix 2/3 cup of magic mix and 1 cup water thoroughly.


Quick mix for bisquits.
5 cups All purpose flour
1/4 cup sugar
1/4 cupbaking powder
1 1/4 tsp. cream of tartar
1 tsp. salt
Store as you would flour
for bisquit topping in above recipe
1 Cup mix
1/4 cup butter
1/3 cup buttermilk.
Add spices as called for in recipe.
Cut butter into mix til resembles corn meal.
Add milk and mix lightly.

I posted on the original badge-in thread too, but I am new to the sisterhood - I haven't even gotten my number in the mail yet! I would love to work on some badges though. I'm going to try and catch up on the beginner level apron badge while I work on this one too. My local chapter is going to draft full apron patterns this month, so I'll hold off on a full apron.
Once I get my number I can order the Farm Kitchen issue too. Anyway.. I'm here. Hi!
