I just finished a bowl of the most delicious oatmeal I have ever had! I got the recipe months ago from the Chicago Tribune newspaper and finally gave it a try. I woke up this morning to a big snowstorm and I was glaring out the window until I started eating my oatmeal. Suddenly I felt warm & cozy and am actually contemplating heading out for a long walk out there in our winter wonderland!

Overnight oatmeal with fruit
3 cups water
1 cup steel-cut oats
1 cinnamon stick or 1/2 teaspoon ground cinnamon
1 cup milk
1 teaspoon vanilla
1/8 teaspoon salt
1/2 cup chopped each: dates, dried apricots, toasted pecans
3 tablespoons brown sugar

Heat water to a boil in a saucepan. Stir in the oats and cinnamon. Cover; let sit at room temperature 8-12 hours (overnight). Stir in the milk, vanilla, salt, dates and dried apricots. (I used dried cranberries and it worked just fine). Cover pan; heat to a simmer over medium heat. Cook uncovered, stirring occasionally, until thick and creamy, 15-20 minutes. Stir in the pecans and brown sugar. (I just sprinkled them on top).

Super simple and absolutely heavenly to eat, even if there isn't a snowstorm by you!

According to the article, from the Chicago Tribune, that accompanied this recipe you need to use steel cut oats. Of course you can always experiment & let us know what happened!

this sounds really good! I don't have steel cut oats though. I have the old-fashioned kind (whole?) think it would work with this recipe? they take forever to cook (compared to the quick oats I'm used to) I wonder if the soaking would help them soften better.

Beth, i think cottage cheese sounds wonderful! i think it's amazing when an ingredient goes well with something, especially when we don't think of it as "normal"... i don't think there is such thing as normal in the food world! you can't knock it till you try it!

Elizabeth, here is what I found on the web about the difference between steel cut and rolled oats:
Steel-cut oats are whole grain groats which have been cut into only two or three pieces by steel rather than being rolled. They are golden in color and resemble small rice pieces.

I prefer the texture of the steel cut oats. It isn't big and mushy like rolled oats.

Beth, I put yogurt and Fiber 1 cereal on top of my oatmeal. Whatever floats your boat!

This is going to sound bizarre, but I add cottage cheese to my oatmeal. I use organic steel cut oats, and when they are done, I take the pan off the stove and stir in cottage cheese while the oatmeal is hot. The cottage cheese melts and makes the oatmeal nice and creamy. Then I toss in the brown sugar, cinnamon and whatever dried fruit suits my fancy! Don't say yuck till you've tried it!

i was wondering what the difference between steel-cut oats and regular oats is? my oat container says "oven toasted old fashioned rolled oats." i love these either way, but i'd like to try something new! i'll add various fruits to the oatmeal, like fresh garden strawberries or peaches... even canned peaches work well! or frozen cranberries.... but raisins and cinnamon is still my favorite!

I have made this oatmeal tons of times and never had a problem. The water in the pan is a bit foamy, but that disappears once I stir the oats. My house is kept at 67 during the day and the heat goes down to 60 at night. I'm not sure if that is your problem though.

Has anyone had problems with MOLD on this oatmeal in the morning?? The oats were not expired (my first thought!!), room temp. here is about 70 degrees.....I thought I saw a green tinge on top when I got up, and after putting my glasses on it was fuzzy!!! Any ideas?? Needless to say I missed out on a good bowl of oatmeal I was really looking forward to!!

Your welcome Gail! My husband loves the oatmeal as much as I do, so we only get two breakfasts each from it. Sarah,give it a try sometime, it is easy to finish up in the morning while getting my son ready for school (first grade) and myself for work.

My new favorite breakfast food. I am the only one that eats, so following the recipe allows me 3 breakfasts. One morning I had with brown sugar and pecans, another with honey and walnuts and another with raisins and brown sugar. I store in refrigerator and prepare a serving each morning to my liking. Possibilities are endless. Thanks so much for the recipe.

I'm so glad you ladies liked it. I've made this a few times now and we just love it. It is easy to change out the dried fruit for whatever you have on hand or is your favorite. Same goes for the nuts! I agree, the steel cut oats have the best texture! Having them soak overnight makes it much quicker & easier to finish up in the morning.

Enjoy, homemade oatmeal is a great way to start a winter day!

Thanks for the recipe, Dawn! I made it yesterday morning for breakfast and it was a big hit with the family. It's very creamy and I just love the texture of the steel cut oats. It takes much less time to cook when you soak it overnight.

It isn't snowing here, just raining a lot, but it was a nice early-morning "warm-me-upper!"
