I wonder being Diabetic; I am trying to find something I can snack on
Low Carb.

So far, I find the words "dessert" and "low-carb" seem contradictory - but I know the really dark chocolate is pretty good AND lower in carbs. The stuff that is supposed to be for diabetics is way too high in my opinion. Using Splenda means not organic - Stevia is organic - natural at least - and can be used, but not sure how good it is in baking. I have not given up hope yet! Keep you posted. I do wish Mary Jane would list the carb content on their recipes for servings. It would be helpful. sigggghhhh - maybe eventually.

I could hug you Brenda! I am a diabetic too and still have to bake for hubby and teen-aged son - and they both love peanut butter cookies - so I can bake these and share then too. I work hard at the low-carb thing, but don't want to make my husband and son suffer.

Deli ham slices wrapped around cream cheese.
Nuts, I looove raw almonds!
Cheese sticks with pepperoni slices
Muenster cheese slices with pepperoni slices
Canned olives
Celery sticks spread with either cream cheese or natural peanut butter
Pork rinds with a no sugar dip
And for the sweet tooth: Homemade peanut butter cookies made with 1 cup natural peanut butter, 1 cup splenda, 1 egg. Mix, roll in balls and bake at 350 until browned. (I think these measurements are accurate, haven't made them in a while.)
If I think of anymore I'll let you know! :)
