Now, I wouldn't recommend that you cook your cobbler just the way I did...but it did manage to survive just fine...after two days of sitting in the fridge just waiting to be baked, because the oven broke! It was totally awesome right out of the oven with ice cream and even good the next day with whip cream. (Despite that lengthy wait in the fridge to be baked.)

Blueberry Cobbler
1 stick butter - melt & pour into bottom of square 9" pan

Mix well and pour directly into butter in pan -
1 c flour
1 1/2 tsp baking powder
1/2 tsp salt
1/4 c sugar
3/4 c milk

Mix well and pour on top of batter - (I used frozen blueberries and no water or sugar and put them on top of the batter and it was fine without the added sugar...guess it depends on the tartness of your berries...or your sweet tooth)
2 c fresh blueberries
1/2 c sugar
1/2 c water

Bake at 350 degrees for 40" to an hour.

I use a recipe almost identical to this, but the butter is melted in the pan right in the oven, then poured out and mixed with the other ingredients in a bowl before returning to the pan.
It works GREAT with gluten- free baking mix, which I had to use in a pinch once, when I was housesitting for a friend. I agree, sugar on top is generally not needed but I'll sprinkle it on when baking for for guests. LOL, not everyone likes my " "tart desserts" as my son calls them.
It is possible to use all manner of fruits in this recipe. I add vanilla and,usually, almond extract to mine , though I do not measure. I sometimes also put lemon juice on top of the fruit and I dot with butter.
I found my recipe in a magazine once while waiting for an appointment. I wrote it down on the back of my checkbook, and voila, a family favorite was born!!

Thanks...we have a freezer full of blueberries! I don't think I've ever made cobbler with them.
