I just finished making this recipe from the current Mary Jane Farmgirls magazine and wow, wow, wow! It is delicious! The bananas made an excellent addition to the mashed sweet potatoes.

This is so simple, yummy and colorful that I've decided to make it for Thanksgiving dinner! I still can't believe how quick and easy this side dish was to make! We loved it!

As Brian said, all the magazines are timeless. If anyone can swing it, it is worth going back in the past to buy the bundles from the very beginning of the magazine. The recipes, articles, and pictures are well worth it!

Sweet Potato Banana Mash

3 medium sweet potatoes, peeled & cut into chunks
2 bananas, ripe or overripe
1/4 cup brown sugar
3 T butter, melted
1/2 t cinnamon, ground
1/4 t nutmeg, ground
1/2 t vanilla

1. Boil sweet potatoes in 2 quarts water for about 20 minutes.
2. In a blender or food processor, combine all the ingredients and mix well. (You can also us a large bowl & a fork to mash all the ingredients together.)

*Substitute honey or maple syrup for brown sugar, or omit sweetener completely if desired.

Makes: 4 Servings

I'll hunt through my magazines to see if I can find it. We moved this past summer, so I'm not sure where they are at the moment.

It is in the Oct/Nov "Tried and True" issue, towards the back. There are 4 recipes that are index card size. This recipe is on one of them.
