Anyone have a recipe for a really yummy eggplant casserole or some such that tastes great and FREEZES well too? Thanks!

Thank you very much. I have eggplant and had no idea what to do with so many. When I planted it in the past, I considered myself lucky to get a half dozen of them. I have been wondering if it could be frozen.

I bread my eggplant and panfry it. I layer it in a casserole with tomato sauce and mozzerella cheese. I find that it freezes really well. I usually let it defrost and then bake until hot and bubbly.
