Hi Farmgirls,

I found this recipe in a recipe book~ Willimsburg art of cookery or,
Accomplished Gentlewoman's companion

Enjoy:
To make Dutch Gingerbread
Take four pounds of Flour , and mix with it two ounces and hlaf of beated Ginger, then rub in a quarter of a pound of butter, and add to it two ounces of Carraway-seeds, two ounces of Orange-peel dry'd and rubb'd to powder, a few coriander-feeds, bruised, two eggs, then mix all up in a stiff paste with two pounds and a quarter of Treacle; beat it very well with a rolling-pin, and make it up into thirty cakes; put in a candied citron;prick them with a fork; butter papers three double, on white, and two brown; wash them over with the white of an Egg; put'em into an Oven not too hot for three quarters of an Hour.

Anyone know what Treacle is?

I just loved the wording of this old recipe, makes me wonder about the women who followed it.... the title 'accomplished gentlewoman's companion' makes me smile....

I found one reference which defined treacle thus: "Treacle, or Fancy Molasses as it is popularly called, is a viscous, rich, dark brown color, concentrated sugarcane juice, manufactured by concentrating the fully matured tropical sugarcane stalks. The thick syrup has a characteristic tropical molasses aroma and a consistency as supple as honey-butter."

Another reference just defined it as 'molasses'.

This makes me hungry for gingerbread!
