Posted - Aug 18 2009 : 2:36:27 PM Has anyone ever made this? I have a recipe that looks wonderful with chopped zucchini, red pepper, jalapenos, and all the seasonings. I have so many zukes in my garden that I thought it would be good, but I've never canned zucchini before!

Posted - Aug 19 2009 : 2:43:18 PM Okay, the basic recipe is in the fridge- zucchini plus red pepper, onion, chilies and salt. Tomorrow I get to drain it and add the other stuff then process. Looking forward to tasting it!

Posted - Aug 18 2009 : 3:20:18 PM I make several quarts of zuc relish every year, thats all my kids and grandkids will eat anymore, ( instead of pickle), so each family will get 4 qts, and I keep a few for me and as gifts.
