Has anyone ever made this? I have a recipe that looks wonderful with chopped zucchini, red pepper, jalapenos, and all the seasonings. I have so many zukes in my garden that I thought it would be good, but I've never canned zucchini before!

I make several quarts of zuc relish every year, thats all my kids and grandkids will eat anymore, ( instead of pickle), so each family will get 4 qts, and I keep a few for me and as gifts.

P.S., make sure you shred the zuc's extra fine, its much better that way in my opinion.

I finally made it again this year first time in 20 years YUM!!!! My mom and I used to make it every year when I was growing up. Love it.

Okay, the basic recipe is in the fridge- zucchini plus red pepper, onion, chilies and salt. Tomorrow I get to drain it and add the other stuff then process. Looking forward to tasting it!
