Posted - Jul 22 2009 : 11:20:28 AM My mother makes green tomato preserves. However, no recipe, but here's her best guess
4 cups green tomatos, sliced thin 4 cups sugar about 3/4 c sugar
Bring to a boil, stiring constantly until the sugar has dissolved. Then reduce heat to "low" just so it keeps cooking and stir now and then. The mixture will thicken as it cooks and may take 1-2 hours. (My mom is a very patient woman). You want it to be spreading consistency. Mom said she would drop a spoonful on a saucer, kind of like making candy.
When I was growing up, we ate this on fresh home baked bread with a glass of cold milk. Mmmm Good

Posted - Jul 18 2009 : 03:56:29 AM I've got one. 4 cups green tomato pulp 4 cups white sugar 2 three oz. pkgs any flavor of fruit flavored gelatin mix DIRECTIONS
1. In a large saucepan over medium-high heat combine tomato pulp and sugar; bring to a boil. Reduce heat and simmer for 20 minutes, stirring occasionally. 2. Remove from the heat and stir in the gelatin mix. Stir until the gelatin is completely dissolved. Pour into hot sterilized jars and seal. When jars are cool put them in the freezer.
I went ahead and did a water bath process and they sealed up nice and no problems. I gave them as gifts at Christmas time last year and my hubby took some to work to share with co-workers and no one could believe it was made from green tomatoes. It was a huge hit.
