I just thought I would share this recipe. It's something that I make every year for my honey when the raspberries are in season. I hope you all enjoy it :)

Fresh Raspberry Pie

5 cups fresh raspberries, divided
1/3-cup water
¾ cup sugar
7-½ teaspoons cornstarch or arrowroot powder
dash of salt
9 inch pastry shell, baked

In a saucepan, crush 1 cup of berries. Add water; simmer for 3 minutes. Strain, reserving juice; discard pulp and seeds. Add enough water to juice to measure 1 cup liquid. In a saucepan, combine sugar, cornstarch , and salt. Slowly stir in raspberry liquid. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat and cool slightly.
Place remaining raspberries in pastry shell; pour glaze over top. Refrigerate for 2-3 hours or until set. Serve with whipped cream if desired. Yield: 6-8 servings.

My raspberries are done for the first part of the season. When it cools off in September (oh yeah) there will be another crop. I will try it then.

This looks like it would be something great to try! I have wild raspberries that grow behind my parents house and i would think they would be great in a pie!

I am going to make the same glaze and make some raspberry napolians for dessert for fathers day tomorrow. HAD to go get more berries today. I froze most of yesterday's berries for jam making later...but had to have more of this raspberry goodness...yum!

I don't think so. I think the berries would become too juicy after thawing. I wish we could freeze it!
