Yeah, I'm going to become the noodle zone. I still have a ton of bell peppers.

EGG NOODLES

2 eggs
1 teaspoon salt
1 1/4 cup flour

Beat eggs with salt until frothy. Work in flour and knead well. Roll out to desired thickness, cut into strips. Sprinkle lightly with flour. Let dry about one hour. Stir noodles into boiling water or broth. Cook with lid on partially for 5-10 minutes. Makes small batch.

Okay, that's the recipe. I've used it for years. I make chicken and noodles and I roll out the noodles really thick because that's how John likes them. But I've rolled the dough out really thin for soup and it works okay. Just remember, it's a really sticky dough, so you will have to add flour to roll it out. I also keep flouring my knife that I using to cut them, that helps. I'm thinking you want thin noodles to sell, and you will have to make sure they are really dry, as in almost crispy, so you will have to roll them out extra thin. Sooooo, are you going to have noodles hanging all over your house now, to take the place of all the transplants?

Oh, I would just add the herbs or sundried tomatoes whenever, I don't see why it wouldn't work. If you have problems with it, we can practice while you're here.

noodles are easy. Eggs, flour. I'll get you my recipe, but it will have to be in the morning, okay? I bought noodles from the Mennonites up north of Spokane, that's a great idea to sell them.
