I want to make waffles on Saturday and we have all this lovely budget mix I would like to use but am not sure of recipe , there are instructions for pancakes and I think waffle batter should be stiffer than pacake batter but.....just not sure - any help would be appreciated Thanks Amy Grace

Posted - Jan 19 2009 : 12:40:18 PM Hi Girls, I made MJF budget mix waffles this morning. Delish! Since it is only two of us I made a small batch but you can easily double what I did... 1 cup budget mix 1 tablespoon sugar 1 tablespoon freshly ground flax seeds 3/4 cup buttermilk 1 egg, beaten 1 tablespoon veggie oil or melted butter 1 teaspoon vanilla extract ~Mix the budget mix, sugar & ground flax seeds together in a batter bowl. ~In a measuring cup, blend together the buttermilk, egg, oil & vanilla. ~Pour the buttermilk mixture into the budget mix and combine. Makes 4 -5 waffles depending on the size of your waffle iron.
