Thanks so much Patricia...and Stu!! I will be baking them tomorrow! I like mine with anise seed for sure..and NOT dipped in chocolate..and with herb tea with honey...I can hardly wait. If I can't sleep tonight I will bake them late tonight!!!

Jenny, Stuie has the best biscotti recipe. It's legendary. Here it is:
3 eggs
1 cup sugar
3/4 cup vegetable oil
1/2 tsp. salt
1/2 tsp baking powder


Whisk all together in bowl until smooth. Slowly add 3 1/1 cups flour, stirring as you add it. Stir and kneed until fairly smoothe. Take it out of bowl, flour your counter or table, and kneed until it's no longer crumbly. You may have to add a little more flour. Divide into four fairly equal balls, roll each into a log, flatten each log until it's about 1/2 to 3/4 inch thick by 2" wide by however long it makes. You should have a long, flat bar. Place on ungreased cookie sheet and bake about 15 minutes until top surface is firm but slightly springy. Slice bars into cookies about a half inch wide and bake a total of about 15 more minutes, rotating the cookies every 5 minutes or so until all the surfaces are slightly brown. Vary with anise seeds, ground almonds, chopped apricots or poppy seeds as you wish (before baking). Dip in chocolate after if you want. Enjoy!! Great with tea. The original idea of biscotti was to dip in sweet wine, which as Italians, we feel duty bound to do. If you need a taster, let us know.

jenny .. i think i read one in one of the issues of maryjane's magazine .. i'll run down and go through them to find it for you .. and you know if it is in the magazine .. it about as healthy a recipe as we can get! i LOVE biscotti!! xo, frannie
