I was wanting to make some pumpkin butter this year to can, but knowing that it a low-acid food I did some research on the subject. I know everyone has their own opinions but, I just dont want anyone to get ill. Here is the article I found and link.


Canning pumpkin butter or mashed or pureed pumpkin is NOT recommended.
Home canning is not recommended for pumpkin butter or any mashed or pureed pumpkin or winter squash. In 1989, the USDA's Extension Service published the Complete Guide to Home Canning that remains the basis of Extension recommendations today, found in the September 1994 revision. The only directions for canning pumpkin and winter squash are for cubed pulp. In fact, the directions for preparing the product include the statement, "Caution: Do not mash or puree." you can also buy pumpkin butter at the store. It's my favorite thing. What the difference in the way it is canned for the store and the way we would can it? I have to admit all I have ever boughten, looks "home" canned, and I haven't died yet. lol And I go through at least a jar a month. lol I love the stuff!

Yes,

You can find canned pumpkin in the grocery. It's relatively cheap too. It's all pumpkin, nothing else added.

We meant to plant some for eating this year but time just got away from us.

I can pumpkin in cubes and then mash up when I use it...but I know alot of folks who do make pumpkin butter. I havn't..hmmmmm and Laurie is right..they DO can it commercially. Makes me wonder. I just find it quicker and easier to can cubes. But you can't can cubed pumpkin butter, can you?

I never thought to can pumpkin, I've always just frozen it too but thank you so much Lillian for the heads up!!

I always freeze my mashed pumpkin for pies and cookies. I never made pumpkin butter, but figured it would just be canned in a pressure cooker. Guess not, huh? I suppose you could just freeze the butter as well.

I freeze pumpkin and squash also. Of course then half the time I don't label them, and so we never know if we are eating pumpkin or squash goodies. But they all taste good.

I usually freeze my pumpkin too and it works great but all of the talk of "butters" lately I thought that would be something different.
