company's comin' for supper tomorrow .. so i pulled out my two mos' fav COOKBOOKS in the world.


TOWNS, TRAILS & SPECIAL TIMES

and

MORNING FIRES, EVENING LIGHTS

both are MARLBORO COUNTRY COOKBOOKS

jus' made this and will refrigerate it until tomorrow:



NUT & CHEESE CROCK

WELL .. O.K. mine came out lookin' like this:



and here's the recipe:

NUT & CHEESE CROCK
(makes 8 to 10 servings)

8 ounces shredded sharp cheddar cheese
8 ounces cream cheese
1 Tbsp. dried chopped chives
1 and half tsp. Worcestershire sauce
1/2 tsp. lemon juice
dash of Tabasco sauce (I used a coupla' dashes!)
Paprika
Pecan pieces

Beat together (i did this by hand) cheddar cheese, cream cheese, chives, Worcestershire sauce, lemon juice and a dash of Tabasco sauce.

Pack into a serving crock; sprinkle with paprika and nuts.
(by the way .. i added the pecan chips right into the cheese mixture to make sure that you get a little 'nutty' taste with each bite rather than just on the TOP layer).
Refrigerate,
Serve with assorted crackers.

gurlz .. i can't recommend more highly that if you love cowboy/girl .. cast-iron .. campfire cooking .. you need to have these two beautiful cookbooks in your collection. (e-bay often has them).

gonna' also serve a delicious CORN CHOWDER that a friend made for me .. Luna and Alan will bring a salad picked fresh from their garden, Kathy and Eddy are bringing a surprize dessert.

i might try to find a fun 'bean dish' to make too!

GUACAMOLE WITH A KICK

4 OR 5 WELL-RIPENED AVOCADOS
2 tBSP. LEMON JUICE
3 tBSP. MINCED JALAPENO CHILI PEPPER
2 tBSP. MINCED RED ONION
2 CLOVES GARLIC, CRUSHED
1 tBSP. EACH: SOUR CREAM, wORCESTERSHIRE SAUCE, OLIVE OIL AND WHITE VINEGAR
2 TSP. EACH, GROUND CUMIN AND CHILI POWDER
1 TSP. SALT
2 tBSP. TEQUILA (OPTIONAL)
2 tBSP. CHOPPED CILANTRO (OPTIONAL).

PEEL AVOCADOS AND MASH WITH LEMON JUICE, LEAVING SOME CHUNKS.

THERE SHOULD BE ABOUT 2 CUPS.

ADD CHILI PEPPERS, ONION, GARLIC, SOUR CREAM, WORCESTERSHIRE SAUCE,
OLIVE OIL, VINEGAR, CUMIN, CHILI POWDER AND SALT.

MIX WELL; COVER AND REFRIGERATE.

TO SERVE, ADD TEQUILA AND CILANTRO, IF DESIRED. SERVE WITH CHIPS.

(makes about 2 cups)

ALSO making a big pan of

STUFFING CORNBREAD (will post a pic of it tomorrow!)
1-1/2 cups all-purpose flour
1-1/4 cups yellow cornmeal
3 Tbsp. sugar
5 tsp. baking powder
1-1/2 tsp. each: salt and poultry seasoning
1/2 tsp black pepper
1 lb. Sausage
1-1/2 cups chopped celery
1/3 cup chopped onion
1/3 cup chopped chili peppers
3 eggs, beaten
1-1/2 cups milk
1/3 cup melted butter (or margarine)

Mix flour, cornmeal, sugar, baking powder, salt, poultry seasoning and pepper in a mixing bowl;
set aside.

Cook sausage, celery, onion and chili peppers in a medium skillet until sausage is done and vegetables are tender;
drain excess fat if needed.

Add to flour mixture.

Combine eggs, milk and melted butter;
stir into sausage mixture, mixing well.

spread into a well-greased 9-inch square baking pan.
Bake in a 400 degree oven for 40 minutes or until golden brown.

To serve, cut into squares

makes 9 to 12 servings
