Hey ya'll, I have zuccinni growing out my ears! I am looking for some good, easy recipes that even the kids would like! Breads, casseroles etc... Any ideas?? Thanks!

Kelly, here is a link to another post about what to do with too many zucchinis. I was keeping it in the back of my mind so I could use it when I am overrun with them this summer. It looks like your garden beat me, though! Good luck and let us know what you try!

Hey Kelly,
If you want to send me your address I will send you some - I have recipes for zucchini chocolate cake, zucchini soup, zucchini coconut bread and a dish called zucchini florentine that my grandma used to make. All of them have passed the 15-year-old-boy-who-doesn't-like-vegetables test. They are all pretty fast and easy too - I don't have a lot of extra time

I don't grow any, myself-- I don't have to, 'cuz the neighbors do! ;) Besides the stand-by zuccinni bread from the Betty Crocker book, my kiddos like them cut into 'fingers'. I salt them just a bit and put them in the oven to soften them a tad.
